The 4 hectares of grape vines of Les Chandelières (commune of Menetou-Salon), facing due east, were planted half in pinot noir and half in sauvignon between 1975 and 1978, on clayey-limestone terroirs of the Kimmeridgian: the white lands.
Maceration of the grapes with about 20% of whole bunches for three weeks. Aging in 600-liter barrels and in tanks for 18 months.
Tannic structure not as pronounced as in Clos des Treilles, deep and smooth pinot.
The elegant and subtle structure of this wine will magnificently echo broiled red tuna, red meats and roasted poultry.
