Our wines
Wine is the fruit of a dialogue: the wines speak and we reply… This is how our cuvées are created. At the Domaine Philippe Gilbert, observation of the plots, tasting of the grapes then the wine, the desires and intuitions of aging have resulted over the years in a range of rich and harmonious wines.
We work on a dozen wines when climate and nature make this possible… Our grapes are picked exclusively by hand. Indigenous yeasts are used to ferment our wines. The use of sulfites is reduced to the maximum.
The classics
Cuvée Domaine, in white, red and rosé.
A story of midwifery: the winegrower’s interpretation of the appellation’s terroirs on a given vintage. A sort of standard meter… Assembling of several plots, except for the rosé…
The “parcellaires”
Clos des Treilles (marketed until the 2015 under the name of Les Renardières) Les Chandelières in white and red ; 35 rangs in red ; 44 rangs in red.
These wines that come from vineyard plots isolated during the harvests are vinified and aged separately. Aging of whites on fine lees from 18 to 24 months. The reds have a variable proportion of whole bunches of grapes, from 20 to 50% according to the vintages. Partially aged in 400 and 600-liter barrels, partially in tanks.
The Hors-Cadres
Hors-série in red; L’émoustillant in rosé; Hors-sujet in white
“Collection” of wines that reveal the winegrower’s subjectivity. A fruity red, another worked without the addition of sulfur, a natural sparkling wine in pinot noir, a pellicular maceration for a sauvignon. And tomorrow? A sauvignon under flor? So many desires and intuitive creations.
